As the seasons change and winter sets in, our calendars become packed with holiday festivities and events, plus big football playoff games gear up as the New Year begins! With so many social gatherings, it's a necessity to have a handful of secret potluck recipes to impress your guests.
To help you out, we've gathered three simple potluck recipes, a main dish, a side, and a dessert, that you can use to impress your family and friends.
These recipes are great any time of year and you can always bring one or two to your next potluck at your favorite Sun RV resort. With such scrumptious options, you're sure to make plenty of new friends during your next vacation!
Main Dish
Tex-Mex BBQ Brisket Sandwiches (14 servings)
Courtesy of Taste of Home Grocery List:
- 1 fresh beef brisket (3-1/2 pounds)
- 1 jar (18 ounces) hickory smoke flavored barbecue sauce
- ½ cup finely chopped onion
- 1 packet chili seasoning
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced garlic
- 1 teaspoon lemon juice
- 14 hamburger buns, split
How it's done:
- Cut brisket in half; place in a 5-qt. slow cooker. In a small bowl, combine the barbecue sauce, onion, chili seasoning, Worcestershire sauce, garlic, and lemon juice.
- Pour over beef. Cover and cook on high for 5-6 hours or until meat is tender.
- Remove beef; cool slightly. Shred and return to the slow cooker; heat through. Serve on buns.
Side Dish
Crowd-Pleasing Taco Salad (10 Servings)

- 1 pound ground beef
- ½ cup ketchup
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 1 medium head iceberg lettuce, torn
- 2 medium tomatoes, diced
- 1 cup (4 ounces) shredded Mexican cheese blend
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- ½ cup mayonnaise
- ¼ cup taco sauce
- 1 package (10-1/2 ounces) corn chips
How it's done:
- In a large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, oregano, chili powder, salt, and pepper.
- Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
- In a large bowl, combine the lettuce, tomatoes, cheese, olives and beef mixture. Combine mayonnaise and taco sauce; pour over salad and toss to coat.
- Sprinkle with corn chips. Serve immediately.
Dessert
Potluck Banana Cake (12-15 servings)

CAKE:
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1-1/2 cups mashed ripe bananas (about 3 medium)
- 1 cup (8 ounces) Sour Cream
COFFEE FROSTING:
- 1/3 cup butter, softened
- 2-1/2 cups confectioners' sugar
- 2 teaspoons instant coffee granules
- 2 to 3 tablespoons milk
How it's done:
- In a large bowl, cream butter and sugar with a mixer until light and fluffy.
- Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking soda, and salt; add to creamed mixture alternately with bananas and sour cream, beating well after each addition.
- Pour into a greased 13-inch x 9-inch baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.
- For frosting, in a small bowl, beat butter and confectioners' sugar.
