Cooking on the road can be a challenge, but you can cook delicious meals in your RV kitchen with just a few simple tools and ingredients. The key is to keep it simple by using ingredients that can be easily stored and are readily available at local supermarkets across the nation.

Each of the following recipes can be made with the appliances in your RV like an oven, stove top, or refrigerator, as well as basic utensils like a can opener, pot, or baking dish. As you travel north after snowbird season or begin your summer camping adventures, try changing your routine and give one of these delicious recipes a shot. Whether you are looking for something with a kick, a tasty pasta dish, or a meatless meal, there's something for everyone on this list!

Easy Spiced Chicken with Chunky Tomato Sauce

This Mexican-inspired dish is simple and warming, making it perfect for chilly nights on the road. Serve with tortilla chips and salsa for a tasty meal!
Grocery List:
  • Cooking spray
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 3/4 teaspoon ground cumin, divided
  • 1/4 teaspoon salt
  • 1 (10 ounce) can mild diced tomatoes and green chilies, undrained
  • 3/4 cup shredded Mexican blend cheese
  • 2 tablespoons chopped fresh cilantro
How it's done:
  1. Preheat broiler.
  2. Heat a large ovenproof skillet over medium-high heat; coat pan with cooking spray. Sprinkle each side of the chicken evenly with 1/2 teaspoon cumin and salt; cook six minutes on each side or until done. Remove chicken from pan; keep warm.
  3. Add 1/4 teaspoon cumin and tomatoes to pan; cook one minute. Return chicken to pan; spoon tomato mixture evenly over chicken. Sprinkle evenly with cheese; broil two minutes or until cheese melts. Top with cilantro.

Linguine with Clam Sauce

Salty, creamy, and full of flavor, this simple pasta recipe is great for a weeknight while traveling. As a bonus, this recipe makes enough for a small group, or you can enjoy leftovers!
Grocery List:
  • 1 (16 ounce) package of linguine
  • 1/2 cup butter
  • 3 cloves chopped garlic
  • 1lb fresh mushrooms, sliced
  • 2 (6-1/2 ounce) cans chopped clams with juice
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup grated parmesan
How it's done:
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente; drain.
  2. Melt butter in large skillet over medium heat. Sauté garlic and mushrooms until golden brown. Stir in clams with juice, parsley, salt and white pepper. Cook over medium heat until hot. Toss with pasta until evenly coated. Serve garnished with Parmesan cheese.

Cheesy Quinoa Bake

Perfect for meatless Monday, this recipe has plenty of veggies and everyone's favorite super grain, quinoa! Spice it up with a bit of crushed red pepper, and top it with your favorite accompaniments.
Grocery List:
  • 1/2 cup quinoa, rinsed and drained
  • Veggies of your choice (frozen or fresh)
  • 1/4 teaspoon salt
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup milk
  • 1 1/2 cups shredded Cheddar cheese, more for sprinkling
  • (Optional) Crushed Red Pepper, Panko Bread crumbs for topping
  • (Optional) Salsa, hot sauce, sour cream, scallions for topping
How it's done:
  1. Lightly sauté veggies with garlic and a touch of salt.
  2. Cook quinoa to package instructions until fully cooked (usually 1 cup water to 1/2 cup quinoa, boiled for 15 minutes).
  3. Preheat oven to 350 degrees. Coat 13x9 inch dish with cooking spray. Mix sautéed veggies into cooked quinoa with a pinch more of salt. Whisk together eggs and milk in large bowl. Fold egg/milk mixture and cheese into quinoa and veggies. Stir very well and let some of the cheese melt. Transfer to prepared baking dish and if using Panko Crumbs or bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.
